It’s all about food right now!

I have done little else since yesterday but make wondrous raw food, and I can’t eat any of it!   I am hosting a Lunch and Learn tomorrow, plus hosting a networking event on Tuesday morning.    Normally, of course, I could eat any of this incredibly healthy food, but in my final phase of ‘cutting’ before a contest there is just so much more precision and different goals than normal.   Everything turned out just great, and I tried a recipe that I had been wanting to make, and it was a smashing success on many levels. 

So yesterday I started by making the Mock Tuna Salad from RAWvolution by Matt Amsden.  I had been wanting to try this one for a long time, and now I wonder why I waited!  Oh my goodness!  SOOOOOO good!  The dressing that you blend to mix into the main ingredients is so delicious, that I ended up reserving some back and Michael has been eating it as a regular salad dressing.  Which then got my wheels to turning, and I created a Honey Mustard-style raw dressing using the basic recipe and just changing a few of the ingredients around.  Delicious!  That recipe book–RAWvolution–is a must-have for your collection!

I also whipped up two double batches of the Famous Onion Bread from the same book.  Holy Cravings, Batman!  When that stuff is in the dehydrator, the house smells so incredible.  My mouth hasn’t stopped watering since yesterday.   Some of the bread I use for the crust in my Mexican Quiche, which I am making for Tuesday morning.  I also candied some walnuts to go in the Apple Cobbler, and those dehydrated overnight as well.

Today, I made the Broccoli Salad, the Apple Cobbler, and the Salad Dressing.  I have all the to-go lunches all packed nicely in their little boxes, and everything else is ready to go in the car in the morning.  I have got to get in bed.  The next two days will be overwhelming.

I have been a cardio-doing fool the past few days.   I did the brutal step machine at the gym Thursday through Saturday.   Most days, I have done two sessions.  Yesterday, I did a long morning session on the step machine with a cooldown on the recumbent bike, and then last night I did intervals on our bike here at the house while watching March Madness.  Today, I only had time for one session, but I have been on my feet and working so hard it feels like I have been doing cardio all day!  I did intervals on the bike, after a 15-minute warmup, and between intervals, I lifted weights focusing on shoulders but also with elevated pushups, and I practiced posing.  Believe it or not, the posing will keep the heart rate up if you don’t relax much between poses.

I feel like I have made progress.  I can see the abs more clearly.  I have got to tan some more.  I am loving Planet Beach!  Wow!  All their stuff is so cool, and I even had a Luminaire session yesterday, which is LED light that actually clears the skin and improves wrinkles.  The light wavelength is supposed to increase collagen production.  It doesn’t tan at all.  It was very relaxing, and so bright that it actually improved my mood dramatically, on a very rainy and bad day.

Oh there is so much I have to do!  Sorry to cut this short, but I will be back as soon as possible to update you on what’s going on.  There is so much involved in these contests, and then I have the cafe and even a good bit of real estate going on in addition.  But that is a good thing.  I love being busy, and I am so glad and grateful to have some real estate business.   I am listing two homes this week, and one is literally like living in a work of art.  I will post some info about it after the photographer takes the pictures.
