			<content:encoded><![CDATA[<p>I tend to be really hard on myself.  One of my hurdles is that I have little patience.   Remember when you asked your mother for something and she said &#8220;What’s the magic word?&#8221;  Meaning–’please’, right?  Not me–my magic word is &#8220;NOW!&#8221;</p>
<p> I am pleased with my progress so far, but looking at the pictures of the women who are winning the contests makes me realize that I have a long way to go to achieve the shape &#038; definition I need, especially in my legs &#038; back. </p>
<p> So, knowing I have a limited time before I step on stage, I feel I need to squeeze the most from every workout &#038; every rep, &#038; of course–the best nutrition program possible.  So while working out this week, it hit me:  instead of thinking how I have to ‘get through’ my prescribed number of reps set by my coach, I wanted to make each rep count.</p>
<p> So my new philosophy is that every exercise I approach, I look at it as ‘X-number of opportunities for improvement’.  For example, if I have 12 reps of wide-grip lat pulldowns, that is 12 opportunities to stimulate my lats into growth, carve deeper definition &#038; cuts, improve my strength, &#038; widen my lat spread.  Wow!  It is amazing how much more energy I have &#038; how intense I feel each rep now that I am looking at it like that!  Instead of getting through 15 squats, I now focus on each rep as a singular opportunity to get my legs in to the best shape possible by the time I step on stage!</p>
<p>When I am getting near the end of an exercise, have about 3 more reps to go, feeling the burn, &#038; the muscles are wanting to give out on me&#8212;I think to myself&#8212;&#8221;3 more to go!  ONLY 3 more opportunities to get as much out of this exercise as I can!  It&#8217;s now or never, or the opportunity is lost.&#8221;  Those last 3 reps, when you think you can&#8217;t go any further, is where the real growth &#038; progress happens.</p>
<p>This has been so powerful for me already, I just wanted to share it.  Maybe it will help motivate you when you start dreading an exercise, or just wanting to get it over with.  Hey–we’ve all been there!  I know I have! </p>

<p>Be Defiant!  Defy the Drive Thru and the Junk Food!  It is slow suicide.  Just because it doesn&#8217;t kill immediately with dramatic blood and guts, doesn&#8217;t mean it doesn&#8217;t kill.  It&#8217;s just slow and insidious, and &#8216;disease&#8217; gets the blame when the abuse people shove in their mouths manifests itself as heart attacks, cancer, diabetes, etc.   Too bad that it can&#8217;t be directly traced to the junk food, so instead of the medical report saying the cause of death is cancer, it would be truthful and say the cause of death was a lifetime of abuse through poor food choices&#8212;suicide by spoon &amp; fork.   Too dramatic?  I don&#8217;t think so.  Just the simple truth.</p>

<p><em><strong>Junk food is killing us slowly with diabetes, heart disease and cancer. But we can&#8217;t stop because we&#8217;re hooked, and the food industry is the pusher.</strong></em></p>
<p>Every chef is said to have a secret junk food craving. For Thomas Keller, chef-owner of Per Se and The French Laundry, two of the most acclaimed restaurants in the country, it&#8217;s Krispy Kreme Donuts and In-N-Out cheeseburgers. For David Bouley, New York&#8217;s reigning chef in the &#8217;90s, it&#8217;s &#8220;high-quality potato chips.&#8221;</p>
<p>&#8220;Father of American cuisine&#8221; James Beard &#8220;loved McDonald&#8217;s fries,&#8221; while Paul Bocuse, an originator of nouvelle cuisine, once declared McDonald&#8217;s &#8220;are the best French fries I have ever eaten.&#8221; Masaharu Morimoto is partial to &#8220;Philly cheese steaks,&#8221; and Jean-Georges Vongerichten confesses a weakness for Wendy&#8217;s spicy chicken sandwich. Other accomplished but less-famous chefs admit to craving everything from Peanut M&amp;Ms, Pringles and Combos to Kettle Chips and Kentucky Fried Chicken.</p>
<p>Having attended culinary school and cooked professionally, I can wax rhapsodic about epicurean delights such as squab, Beluga caviar, black truffles, porcini mushrooms, Iberico Ham, langoustines, and acres of exceptional vegetables and fruits. But I also have an unabashed junk food craving: Nacho Cheese Doritos. Sure, there are plenty of other junk foods I enjoy, whether it&#8217;s Ben &amp; Jerry&#8217;s Ice Cream or Entenmann&#8217;s baked goods, but Doritos are the one thing I desire and seek out regularly. (Not that I ever have to look that hard; I&#8217;ve encountered them everywhere from rural villages in Guatemala to tiny towns in the Canadian Arctic.)</p>
<p>For years I wondered why I craved Doritos. I knew the Nacho Cheese powder, which coats your fingers in day-glo orange deliciousness, was one component, as were the fatty, salty chips that crackle and melt into a pleasing mass as you crunch them. I figured there was a dollop of nostalgia in the mix, but an ingredient was still missing in my understanding. Then I read a spate of articles about &#8220;umami,&#8221; designated the fifth taste, along with sweet, sour, salty, and bitter, means &#8220;deliciousness&#8221; in Japanese and is described as &#8220;a meaty, savory, satisfying taste.&#8221;</p>
<p>I knew some foods &#8212; parmesan cheese, seaweed, shellfish, tomatoes, mushrooms and meats &#8212; were high in umami-rich compounds such as glutamate, inosinate and guanylate. (Most people know umami from the much-maligned MSG, or mono sodium glutamate.) And I knew combining various sources of umami &#8212; such as the bonito-flake and kombu-seaweed broth known as dashi, the foundational stock of Japanese cuisine &#8212; magnified the effect and delivered a uniquely satisfying wallop of flavor.</p>
<p>What I didn&#8217;t know was that &#8220;Nacho-cheese-flavor Doritos, which contain five separate forms of glutamate, may be even richer in umami than the finest kombu dashi (kelp stock) in Japan,&#8221; according to a New York Times article from last year.</p>
<p>Mystery solved. Now I knew that whenever the Doritos bug bit me, I was jonesing for umami. I had to admit it: I am a junk food junkie and Frito-Lay is my pusher-man.</p>
<p>I am hardly alone. Frito-Lay is the snack-food peddler to the world, with over $43 billion in revenue in 2008. The 43-year-old cheesy chip is a &#8220;category killer,&#8221; dominating the tortilla chip market with a 32 percent share in 2006, and number two in the entire U.S. &#8220;sweet and savory snacks category,&#8221; just behind Lay&#8217;s potato chips.</p>
<p>$1.7 billion in annual sales in the U.S, is big business. Behind the enigma of Doritos’ dominance, and the lure of junk food to even the most refined palettes in the world, are the wonders of food science. That science, in the service of industrial capitalism, has hooked on us a food system that is destroying our health with obesity-related diseases. And that food system is based on a system of factory farming at one end, which churns out cheap, taxpayer-subsidized commodities like corn, vegetable oil and sweeteners, and the giant food processors at the other, like Frito-Lay, that take these commodities and concoct them into endless forms of addictive junk foods.</p>
<p>Steven Witherly begins his book, Why Humans Like Junk Food, by noting in studying the &#8220;psychobiology&#8221; of Doritos he consumed the &#8220;food intake and chemical senses literature &#8212; over five hundred research reports and four thousand abstracts &#8212; in order to discern the popularity of Doritos.&#8221; Witherly coined the term &#8220;Doritos Effect&#8221; to explain its popularity and in his book outlines 14 separate ways in which Doritos appeals to us.</p>
<p>There’s the &#8220;taste-active components,&#8221; sugar, salt and umami; ingredients like buttermilk solids, lactic acid, and citric acid that stimulate saliva, creating a &#8220;mouth-watering&#8221; sensation; the &#8220;high dynamic contrast&#8221; of powder-coated thin, hard chips that melt in the mouth; a complex flavor aroma; a high level of fat that activates &#8220;fat recognition receptors in the mouth … increases levels of gut hormones linked to reduction in anxiety … activates brains systems for reward, and enhances ingestion for more fat&#8221;; toasted, fried corn that triggers our evolutionary predilection for cooked foods; starches that break down quickly, boosting blood levels of insulin and glucose; and so on.</p>
<p>Witherly explains that some umami sources like MSG don’t have much taste by themselves, but when you add salt,&#8221;the hedonic flavors just explode!&#8221; And Doritos has plenty of both. The tiny 2-oz. bag of Doritos I&#8217;m holding, which in the past would be a warm-up to a Nacho Cheesier dinner, lists MSG near the top, before &#8220;buttermilk solids,&#8221; along with nearly one-sixth of my recommended daily intake of sodium.</p>
<p>One aspect of Doritos that whet my curiosity was, how much does Frito-Lay spend on goods like corn, oil and cheese? Not surprisingly, this data was nowhere to be found in the annual report of Pepsico, Frito-Lay’s parent company. But I gleaned a clue from a 1991 New York Times article. In it, a Wall Street analyst stated that Frito-Lay’s profit margin, around 19 percent in those days (which is close to its margin of late), approached that of Kellogg&#8217;s. The analyst, an expert on the food industry, said: &#8220;Kellogg buys corn for 4 cents a pound and sells it for $2 a box.&#8221; That&#8217;s a markup of nearly 5,000 percent over the base ingredient.</p>
<p>I’ll save you the math, but Frito-Lay may do even better than Kellogg&#8217;s. If it uses two ounces of cornmeal in my 99 cents bag of Doritos, it apparently costs the snack-food giant less than one measly penny. And here’s a critical point about the food industry. The more they can process basic food commodities, the more profits they can gobble up at the expense of farmers. In The End of Food, Paul Roberts writes that in the 1950s, farmers received about half the retail price for the finished food product. By 2000, &#8220;this farm share had fallen below 20 percent.&#8221;</p>
<p>This is the result of the global food system constructed by the U.S. and other Western powers under the World Trade Organization. Countries that once strived for food security by supporting their domestic farmers are now forced &#8212; in the name of free trade &#8212; to open their agricultural sectors to competition from heavily subsidized Western agribusinesses. By the mid-1990s, according to rural sociologist Philip McMichael, 80 percent of farm subsidies in Western countries went to &#8220;the largest 20 percent of (corporate) farms, rendering small farmers increasingly vulnerable to the vicissitudes of a deregulated (and increasingly privately managed) global market for agricultural products.&#8221;</p>
<p>The WTO-enforced system and government subsidies enables food giants &#8212; such as Pepsico, Kraft, Mars, Coca-Cola, McDonald&#8217;s, Burger King and Wal-Mart &#8212; to source their ingredients globally, giving them the power to force down prices, which drives more and more farmers off the land in the global North and South alike. Then the food companies turn around and manufacture high-profit products that seem like an unbelievable bargain to us. In fact, they make this a selling point, and not just with &#8220;Dollar Menus.&#8221;</p>
<p>Last year, in the wake of the economic meltdown, KFC launched the &#8220;10 Dollar Challenge,&#8221; inviting families to try to recreate a meal of seven pieces of fried chicken, four biscuits and a side for less than its asking price of 10 bucks. Of course this is a virtually impossible feat, apart from dumpster diving. But KFC isn’t hawking alfalfa sprouts and a plate of mashed yeast at that price. Witherly, in Why Humans Like Junk Food, writes that &#8220;high energy density food is associated with high food pleasure.&#8221; The corporate food&#8217;s revenue model is based on designing products oozing with fat, salt, sugar, umami and chemical flavors to turn us into addicts.</p>
<p>While food companies can trot willing doctors, dieticians and nutritionists who claim that eating their brand of poison in moderation can be part of a balanced diet, the companies are like drug dealers who prey on junkies. As Morgan Spurlock explained about McDonald&#8217;s in Supersize Me, the targets are &#8220;heavy users,&#8221; who visit the Golden Arches at least once a week and &#8220;super heavy users,” who visit ten times a month or more. In fact, according to one study, super heavy users &#8220;make up approximately 75 percent of McDonald&#8217;s sales.&#8221;</p>
<p>Fast-food Addiction</p>
<p>Perhaps no company better exemplifies the intersection of factory farming, fast food and food addiction than McDonald&#8217;s. It pioneered many of the practices of standardized, industrial food production that made it into a global behemoth. In 1966 McDonald&#8217;s switched from about 175 different suppliers for fresh potatoes to J.R. Simplot Company’s frozen French fry. A few years later, McDonald&#8217;s switched from a similar number of beef suppliers to just five. Within a decade, notes Eric Schlosser, McDonald&#8217;s had gone from 725 outlets nationwide to more than 3,000.</p>
<p>Tyson did the same with chicken, which was seen as a healthy alternative to red meat. It teamed up with McDonald&#8217;s to launch the Chicken McNugget nationwide in 1983. Within one month McDonald&#8217;s became the number two chicken buyer in the country, behind KFC. The McNugget also transformed chicken processing. Today, Tyson makes most of its money from processed chicken, selling its products to 90 of the 100 largest restaurant chains. As for the health benefits, Chicken McNuggets have twice as much fat per ounce as a hamburger.</p>
<p>The entire food industry, perhaps best described as &#8220;eatertainment,&#8221; has refined the science of taking the cheap commodities pumped out by agribusiness and processing them into foodstuffs that are downright addictive. But food is far more than mere fuel. It is marketed as a salve for our emotional and psychological ills, as a social activity, a cultural outlet and entertainment.</p>
<p>Faced with little time to cook, bland industrial meat and drawn to exciting and addictive processed foods, most Americans gorge on convenience food. In 1900, the typical American woman spent six hours a day in food prep and cleanup. By last year, Americans on average took 31 minutes a day. For many, &#8220;cooking time&#8221; consists of opening up takeout containers, dumping the contents on a plate and throwing away the trash.</p>
<p>To get us in the door (or to pick up their product at the supermarket), food companies stoke our gustatory senses. The food has to be visually appealing, have the right feel, texture and smell. And most of all, it has to taste good. To that end, writes David Kessler in The End of Overeating, the food industry has honed in on the &#8220;three points of the compass&#8221; &#8212; fat, salt and sugar.</p>
<p>One anonymous food-industry executive told Kessler, &#8220;Higher sugar, fat and salt make you want to eat more.&#8221; The executive admitted food is designed to be &#8220;highly hedonic,&#8221; and that the food industry is &#8220;the manipulator of the consumers&#8217; minds and desires.&#8221;</p>
<p>This food is even designed to be pre-digested. Factory-farmed meats are ground up, injected with salt, water, a multitude of flavorings and chemicals, reconstituted and often processed with extra fat (like the McNugget). Speaking to an expert in &#8220;sensory stimulation and food,&#8221; Kessler explains how food is engineered to deliver pleasing flavors, aromatic and textural sensations and dissolve easily in the mouth. He writes: &#8220;in the past Americans typically chewed a mouthful of food 25 times before it was ready to be swallowed; now the average American chews only ten times.&#8221; Even the bolus &#8212; the wad of chewed food &#8212; is designed to be smooth and even. It&#8217;s &#8220;adult baby food.&#8221;</p>
<p>Referencing studies with either humans or lab animals, Kessler shows how varying concentrations and combinations of fat and sugar intensify neurochemicals, much the same way cocaine does. One professor of psychiatry explains that people self-administer food in search of &#8220;different stimulating and sedating effects,&#8221; just as is done with a &#8220;speedball&#8221; &#8212; which combines cocaine and heroin.</p>
<p>Kessler deconstructs numerous restaurant chain foods to show they are nothing more than layers of fat, salt and sugar. A reoccurring item is &#8220;bacon-cheese fries,&#8221; a coronary event on a plate that displays dazzling engineering precision. One food consultant calls it &#8220;cheap filler&#8221; in which &#8220;20 cents&#8217; worth of product gets me $5 worth of wow.&#8221; The expert in sensory stimulation explains, &#8220;Adding more fat gives me more flavor. It gives me more salt. And that bacon gives me a lot more lubricity.&#8221; A food scientist for Frito-Lay describes the textural appeal: &#8220;You&#8217;ve got some pieces that are crispy on the outside, soft on the inside. It&#8217;s warm. It&#8217;s probably gooey, stringy, so you have to use your fingers a lot to eat it, and you have to lick your fingers. It&#8217;s all multisensory.&#8221;</p>
<p>Or take the McGriddle, which can be deconstructed along the &#8220;three points of the compass.&#8221; It starts with a &#8220;cake&#8221; made of refined wheat flour, essentially a sugar, pumped with vegetable shortening, three kinds of sugar and salt. This cradles an egg, cheese and bacon topped by another cake. Thus, the McGriddle, from the bottom up, is fat, salt, sugar, fat, then fat and salt in the cheese, fat and salt in the bacon, finished off with fat, salt and sugar. And this doesn&#8217;t indicate how highly processed the sandwich is. McDonald&#8217;s bacon, a presumably simple product, lists 18 separate ingredients, including what appears to be six separate sources of umami.</p>
<p>The success of the McGriddle and sandwiches like Wendy&#8217;s Baconator, which mounds six strips of bacon atop a half-pound cheeseburger and sold 25 million in its first eight weeks, has inspired an arms-race-like escalation among chain restaurants. Burger King has a near-identical imitation with the French Toast Sandwich. In 2004 Hardee&#8217;s went thermonuclear with its 1,420-calorie, 107-grams-of-fat-laden &#8220;Monster Thickburger.&#8221; And people are gobbling them up.</p>
<p>Perhaps you feel smug (and nauseated) by all this because you are a vegetarian, a vegan or a locavore, or you only eat organic and artisanal foods. Don&#8217;t. Americans are under the thrall of the food industry. More than half the population eats fast food at least once a week; 92 percent eat fast food every month; and &#8220;Every month about 90 percent of American children between the ages of three and nine visit a McDonald&#8217;s,&#8221; states Schlosser.</p>
<p>We know this food is killing us slowly with diabetes, heart disease and cancer. But we can&#8217;t stop because we are addicts, and the food industry is the pusher. Even if can completely opt out (which is almost impossible), it&#8217;s still our land that is being ravaged, our water and air that is being poisoned, our dollars that are subsidizing the destruction, our public health that is at risk from bacterial and viral plagues.</p>
<p>Changing our perilous food system means making choices &#8212; not to shop for a greener planet, but to collectively dismantle the nexus of factory farming, food corporations and the political system that enables them. It&#8217;s a tall order, but it&#8217;s the only option left on the menu.</p>

			<content:encoded><![CDATA[<p><strong>THE NEW SLOGAN</strong></p>
<p>On the way home from the gym, my favorite radio station played a tagline that said <em><strong>&#8220;Aging Disgracefully&#8212;And Proud of It!&#8221; </strong></em> I laughed out loud!  Immediately my mind started thinking of all the ways that could be applied, especially to you Defiant friends of mine.   This is going to be part of my slogan from now on!</p>
<p><strong>HOW CAN WE INTERPRET AGING GRACEFULLY?</strong></p>
<p>How can we interpret this &#8216;Aging Disgracefully&#8217;?  What is aging gracefully, anyway?  Does it mean simply sitting back and graciously accepting the ravages of time?   Does it mean meekly succumbing to the degeneration of the body, mind, and spirit without a fight?  Does it mean never lifting a finger to hold off the effects of time&#8211;if indeed it is time that is our enemy?  Is it?  Or is it what we do&#8211;or don&#8217;t do&#8211;to our bodies?</p>
<p>Or is it more positive?  Does it mean that we have to accept that youth is ephemeral and that nothing remains the same?  The only constant is change.   Does it mean that you love yourself no matter if you are &#8216;of a certain age&#8217; or at the prime of your life?  Does it mean that you accept yourself despite a few lines and wrinkles here and there?</p>
<p>My thought is it could be either positive or negative.  As with anything in life, the &#8216;thing&#8217; is neutral.  It is how you interpret and respond to it that makes it bad or good.  But in the way that the term is consistently used, I interpret it to mean that you accept the inevitable without resistance.</p>
<p><strong>THE MARCH OF TIME</strong></p>
<p>The reason the idea of Aging Disgracefully struck such a chord with me is my own natural Defiant nature.  I don&#8217;t intend to grow old gracefully&#8211;I intend to fight it every step of the way!  But by &#8216;growing old&#8217; I mean old in spirit, too weary to fight the damages that occur to us every day of our lives through our environments, foods, chemicals, stress, and even the natural processes of our bodies.  I don&#8217;t mean in terms of years.  We can&#8217;t stop the march of time.  We can only make the very best of the time we are given.  It doesn&#8217;t matter how much time has passed, or how many years we have lived.  I bet right now if I asked you to think of the youngest 80-year-old you know, you could think of someone immediately that inspires you.  Now, think of the oldest 50-year-old that you know.  Not such a pleasant thought, huh?</p>
<p>There are people very close to me who just frustrate me to no end with the age thing.  They are so old&#8211;but not in years!  They are old in spirit and their mental outlook.  They couldn&#8217;t wait to hit a certain age so they could finally draw social security and get senior discounts.  And all they talk about is how many maladies they have, how much they hurt, how old they feel, and how they wish they were younger so they could do things they want to do.  In my eternal optimism, I have tried to help by demonstrating exercises&#8211;but they refused to try them.  By making delicious healthy food for them and teaching them how to replicate it&#8211;but they just go though the nearest drive thru.   I have been so frustrated I wanted to pound my head against a wall.   But I decided to accept it and just be an example by my actions, and not try to force it down their throats.  Nobody wants anything forced on them&#8211;THEY have to WANT IT for themselves.   If your biggest goal in life is to get your AARP card, there&#8217;s nothing anyone can do to help you!</p>
<p><strong>AGING DISGRACEFULLY</strong></p>
<p>Here&#8217;s how I am aging disgracefully:</p>
<p><em>There&#8217;s nothing graceful about my workouts.</em> Huffing and groaning under heavy weights in contorted positions is definitely NOT graceful.  Jumping around like a frog or using cardio machines in ways that the manufacturer never intended is definitely not graceful, and I get more than my share of strange looks.  But every one of those exercises keeps me young, healthy, strong, vibrant, and energetic.  They are building the muscles, shaping them, forging them in the fire of battle.</p>
<p><em>Sweat is not graceful.</em> Soaking wet clothes and hair plastered under my ubiquitous baseball cap is not graceful.  But that sweat is burning off the fat that stores all sorts of nasty toxins, and makes us look older and feel tired and sick.  That sweat is cleansing every pore and excreting toxins out of the body.  I read recently that we all need to sweat an hour a day to help the body shed its load of toxins.  Don&#8217;t go sit in a sauna for crying out loud!  Get moving!  (Although I must admit that my favorite way to sweat is lying on a float behind our boat in the hot summer sun, getting my tan and Vitamin D on!)</p>
<p><em>Eating like a horse isn&#8217;t graceful.</em> Keeping my kitchen in a perpetual mess through constant food preparation isn&#8217;t graceful.  But that beautiful, wholesome, raw living food is the key to supple skin, shining hair and fewer wrinkles.  It holds the key to brighter eyes, smooth skin, and rosy cheeks.  The food is the fuel that builds the full round muscle tone that gives a body a sexy youthful shape.  And that food is so pure that it cannot be stored as toxic waste in white adipose tissue, better known as &#8216;fat&#8217;.   Instead it is broken down and nourishes every hard-working cell in our bodies.</p>
<p><em>Being different isn&#8217;t graceful. </em>No, I don&#8217;t eat like everybody else.  I smile and talk to everyone at parties, without touching the food.  I turn down the offers of alcohol and toxin-laden processed food.  I bring my own food wherever I go.   I irritate the crap out of servers at restaurants.  I stand up for my health and try to educate others to do the same.  I don&#8217;t agree with everyone, and I let my opinions be known.   Going along with the crowd and avoiding taking a stand will get you exactly the same thing the crowd is getting.  Is that really what you want?  Don&#8217;t get me wrong&#8211;I am not contentious, and I try not to call attention to my lifestyle choices, but everybody wants to ask me what my secrets are.  And then they don&#8217;t like the answers!  They want the results without the work.  Sorry&#8211;life doesn&#8217;t work that way!</p>
<p><em>Being Defiant isn&#8217;t graceful!</em> I will not go gently into that good night.  I am definitely the one who will be raging against the dying of the light.  I am on a mission to prove that we can all be in better shape in our 40&#8217;s than in our 20&#8217;s, when we didn&#8217;t know anything or care, because you could eat pizza and drink beer every day and still look relatively hot.  But a few years later, we pay the price for those youthful indiscretions.  We know better now.  Science is so much better now.  We have weapons available to us in the fight against aging that no other generation has had.  I AM NOT TALKING ABOUT SURGERY OR MAGIC PILLS!  I mean the internet, books, studies, videos, and all the other media that provides us with an overwhelming amount of information.  We were not born with an owner&#8217;s manual.  It is our responsibility to educate ourselves on how to take care of our bodies.   Yes, there is conflicting information.  Yes, it is confusing.  Keep studying.  Find what&#8217;s right for you and your body.   The path will illuminate if you keep shining the light of knowledge.</p>
<p><em>Being selfish isn&#8217;t graceful. </em> What???  Why Christy, whatever do you mean?  Society wants us to put ourselves last.  Wanting to be healthy, attractive and vibrant is often looked upon as selfish, because you have to spend time exercising, eating right, and focusing on your inner needs and desires.  Especially mothers&#8211;the more you focus on your family and the less you take care of yourself, the more you are lauded and praised by society while you wither away inside.  If you take time for yourself, you run the risk of a lot of disapproval.  I feel for you.  But remember what they tell you on the plane before you take off&#8212;put the oxygen mask on yourself first so that you will be able to help others.  Put the &#8216;oxygen mask&#8217; of exercise and nutrition on yourself now, before it is too late!   How can you serve others when you are so sick that you need someone to take care of you?   It is NOT selfish to hold your health in the highest regard, to want to be beautiful inside and out, and to strive to build the best body that you can.   What better example can you set?</p>
<p><em>Shopping in the juniors section isn&#8217;t graceful</em> (i.e. appropriate for someone my age).  But if the clothes fit and look great, then who cares how old I am?  A beautiful lady, exactly my same age, commented on the fact that I was wearing a really wicked-cool Bulzeye shirt, denim Ed Hardy miniskirt (with my favorite skulls of course) and funky glittery boots.   She said, &#8220;I thought I was too old to wear things like that, but it looks great on you!&#8221;  I told her I didn&#8217;t see an age limit on the clothes, they certainly weren&#8217;t Garanimals, and that as gorgeous as she is she should wear whatever makes her feel good.   She headed out to the mall.  My point&#8211;do what makes you feel good, and look good.  Wear the bright color instead of grey or black.    Wear the cool shoes or the racy cocktail dress.  Dress for how you feel, and how you WANT to feel.  Push the limits.  Have some fun.  After all, what do the young do?  They PLAY!!!  Don&#8217;t take age seriously, for crying out loud.  Have some fun with it!  Your assignment for today is to GO OUT AND PLAY!!!</p>
<p><strong>BE DEFIANT!</strong></p>
<p>So, in closing, my dear friends, I want you to start &#8216;Aging Disgracefully&#8217;!   And be proud of it!  Fight the good fight.  Take up the weapons at your disposal and defend your one and only body.   Feed it right, keep it moving, and maintain it to perfection.  Fiercely guard your precious health!</p>
<p>Stand up, misbehave, play, have fun, get moving, and most of all&#8211;change your history today!</p>

			<content:encoded><![CDATA[<p>OK, I have been hinting at a big new project I am working on, and I am ready to tell you about it.  </p>
<p>As you all know, unless you have been under a rock or don&#8217;t have cable, the real estate market is, well&#8230;&#8230;not what it used to be.  The reality of that situation coupled with the realization that I am now the happiest I have ever been, has made me want to pursue my true passion&#8211;fitness and nutrition.</p>
<p>Now, I am not by any means abandoning real estate!  I just have a lot of time now that I didn&#8217;t have before, and have put it to good use in the gym.  And in studying holistic nutrition.  If I had the funds, I would pursue a PhD in Holistic Nutrition, and I do plan to someday.  But I study nutrition passionately, and learn as much as I can every day.  With what I learned in my studies, and with the consistent workout schedule, that led me back into competition.  Which then led me to Team Bombshell, and the rest, as they say, is history.</p>
<p>My friend asked me last week if I was happy.  It only took me a second to stop and realize&#8211;I am living my dream.  I told her, truthfully, that I am the happiest I have ever been in my life.  I am so grateful for everything I have&#8212;my incredible husband and soul mate, Michael; the &#8216;bestest&#8217; kitty in the world, Jukebox; a wonderful family; fantastic friends; and I finally had the guts to step out there and really pursue my dream of competing in Figure.  People come into our lives for a reason .  &#8216;When the student is ready the teacher appears.&#8217;  I was ready, and Shannon and Rob appeared.  And my life has changed.</p>
<p>The only thing missing right now is a consistent source of income.  I am still working and have been blessed with much more business than most agents have in this market.  And I do feel positive that good things are to come.  But when I really sat down and thought about what it is I really want, I realized that I really want to work in the fitness industry and positively affect people&#8217;s lives through better health and nutrition.  Basically, I want to get paid for working out!  <img src='http://defiant-health.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>
<p>I have been working on a recipe book for a while, although I have been very intermittent and not committed enough to it.  That is going to change.  I am going to work on that with a vengeance.  With what I have learned, I really feel I can help guide people to health through Living Cuisine.  </p>
<p><strong>But the big thing right now is this:</p>
<p>I just became re-certified as a personal trainer!</strong>  I had let my certifications slip after I moved here and got so busy in real estate.   But I realized I wanted to train people again, especially because I get so many requests from this site and people that I meet in every day life.  Plus, with training, I can have a flexible schedule that allows me to also work real estate.  So it&#8217;s the best of all worlds!</p>
<p><strong>A BETTER WAY:</strong></p>
<p>But with the economy the way it is, the number of people paying 50 bucks an hour for someone to stand over them and count reps has dropped dramatically.  I see the trainers in my town suffering the loss of many clients, and the gyms are letting many of their in-house trainers go.  So, there has to be a better way.  A way to provide excellent services to many people, at a very affordable cost.</p>
<p>I think I have found that way.  Inspired by the way that I am trained by Team Bombshell, which works so incredibly well, I realized that this model of training could be applied to &#8216;regular&#8217; folks&#8211;not just us gym bunnies in sparkly swimsuits!  Come on&#8211;you know how to count.  You can count your own reps!  What most people need is a plan.</p>
<p><strong>So here is what I am now offering:</p>
<p>Nutrition plans and workout plans emailed every four weeks, with unlimited email support throughout the month.  </strong></p>
<p>Everything will be detailed and spelled out for the client, on a daily basis.  Each plan will be customized to the client, based on a thorough initial consultation.  The initial consultation can be in person or on the phone.  I will create the programs and send them to the client.  The clients&#8217; responsibility is to simply FOLLOW THE PLAN!  Print out the plan, tuck it in your workout journal (you DO have one, don&#8217;t you?) and take it to the gym.  Have your meal plan with you, and you won&#8217;t even have to think about what you are eating every day&#8211;it will all be spelled out for you and relieve all that stress!</p>
<p><strong>I want this to be accessible for EVERYONE, so the fee structure is as follows:</p>
<p>&#8211;Initial consultation:  $150</p>
<p>&#8211;4-week nutrition plan:  $100 </p>
<p>&#8211;4-week workout plan:  $100</strong></p>
<p>So, basically, you get a comprehensive, customized nutrition or workout plan starting at <strong>$100 per month!</strong>  That&#8217;s the equivalent of only two private training sessions!  If you are serious about your health, you can save $100 per month just by following the nutrition plan and eliminating a lot of unhealthy things that are also costing you money.  Heck, $100 is just one decent dinner out anymore.  </p>
<p>This would also be on a month to month basis&#8211;no contract, no obligation.  Your success will depend on the level of your commitment and motivation.  50 percent effort will be a disaster and you will say that the plan didn&#8217;t work.  So don&#8217;t go there.  But if you are really committed and self-motivated to achieve a healthy lifestyle, then this would be perfect for you.  And remember, it is customized to you, so you don&#8217;t have to fear the plan.  It will challenge you to achieve a new personal best, but will be very achievable.</p>

I especially want to work with people who want to explore the Living Foods lifestyle in more depth and still be fit, toned, and not stick-thin and gaunt like so many people perceive vegetarians to be.   But I can work with anyone&#8211;you don&#8217;t have to go raw vegan for me!  I promise!  I WILL teach you about the power of whole foods, though.  It&#8217;s your choice what to do with the education.</p>

			<content:encoded><![CDATA[<p>I am so sorry I haven&#8217;t posted in a couple of weeks.  Boy, do I have a lot to tell you all!  I haven&#8217;t had time to sit at the computer long enough to type out one of my epic posts.  We have been on the road, both visiting family and I also ended up competing a MONTH earlier than I was scheduled to.</p>
<p>And that brings me to the big news!   I AM SO EXCITED!!!   MY DREAM FINALLY CAME TRUE AND I WON AN NPC FIGURE COMPETITION!!!  I was so fortunate to win the Overall Title of the Masters Division at the Fort Lauderdale Cup last weekend.  In Masters, I am competing against women my age&#8211;35 and over.  But in the BIG SURPRISE of the evening, I also won my class, Class B, in the OPEN Division&#8211;where I have to compete against EVERYONE!!!  That blew me away.  I won everything I entered, except the Overall posedown for the Open Title.  My teammate, and great friend, Andrea Lyons won that&#8211;and deservedly so.  She is awesome, and has been top 10 nationally for at least the past couple of years.</p>
<p>Explanation:  In Figure, you compete according to height (and also age in the Masters).  I am exactly 5&#8242;4&#8243;, so I am in either Class B or C at each show, depending on how they have the classes broken down.  This one had 4 classes, so I was B.  In the National Shows, they have 6 classes, so I am C.</p>

This was a whirlwind and totally unexpected, because I went down to the show ONLY to be in the team picture and to watch and learn, since I was getting ready for the November 14th show. Michael didn&#8217;t even go with me, because I had no plans to compete yet.  I didn&#8217;t think I was even CLOSE to ready!</p>
<p>When I arrived and saw Shannon, my coach, she gave me some of the highest praise I have ever received in my life.  She is a tough cookie!  Not easily impressed.  But the second I saw her, she grabbed me and said that she was so impressed with my work ethic and the amazing improvements I have made in such a short period of time.  She took me up to Rob, her husband and my diet guru, to be evaluated.  They both said they wanted me to get on stage and compete.  I was shocked, and said &#8216;No way, I am not ready yet!&#8217;  They said &#8216;Yes, you are, and at the very least it would be great practice and a learning experience.  Get on stage and let&#8217;s see what happens.&#8217;  </p>
<p>One thing I have learned is to trust Shannon and Rob&#8217;s judgment implicitly.  So I agreed.  I did have my suit and heels with me, because I was scheduled to attend a posing seminar, so all I really needed was a tan.  So they sent me to the spray tan people&#8211;which is a Godsend!  WAY better and tons easier than painting myself with Pro Tan!   They sprayed me down, greased me up, and put me out on stage.  I practiced like a mad woman at the posing seminar Friday night, because I totally was not any good at posing my back lat spread.  Several pro competitors worked very diligently with me to help me, and they were such a blessing.  I finally &#8216;got it&#8217;!  And lo and behold, I won both my classes, and the Masters Overall!  And I even heard comments about my back looking really good&#8211;whoo hoo!  </p>
<p>Poor Michael was so upset that he wasn&#8217;t there to see me win my first show.  But even when I called Friday night to tell him that I was going to compete, I had no inkling of winning, so we didn&#8217;t think much of it.  I really was only looking at it as practice, so I wasn&#8217;t stressed at all.  Maybe that was for the best!  I was totally relaxed, joking around and having fun with the ladies backstage, and just really enjoyed all of it.  But when I called him to tell him I won, he was so happy but so upset he wasn&#8217;t there to see it.  I feel horrible, but who knew?</p>
<p>I even had to ship all my trophies home by Fedex!  I couldn&#8217;t carry them, as I flew by myself.  They just arrived here on Wednesday.</p>
<p>If it were not for my dear &#8216;Bombshell&#8217; Sista Angela Firkins, I wouldn&#8217;t have even been there.  With all our travel and facing a long lean winter of probably very low real estate sales, I didn&#8217;t think I could justify spending the money to go.  She said she was going, and that if I could just get down there, I could stay with her and save money.  So I wouldn&#8217;t have even been able to be there for the team photo or anything if it weren&#8217;t for Angela, much less compete.  So I wanted to give her a big shout-out, and a heartfelt &#8216;thank you&#8217; with my utmost, humble appreciation.  I love you, Ang!!!!</p>

<p>There was also a Pro Figure and Fitness competition at this show.  That was awesome.  I was able to meet some of the amazing women that I admire from the magazines all the time.  For example, Erin Stern.  Her recent 6-page spread in FLEX magazine was awe-inspiring and so motivational.  I told her I had her picture in my office for motivation!  She was SO nice and gracious.  Truly beautiful inside and out.  Two of my teammates, Gennifer Strobo and Cheryl Brown, placed in the top five of the Pro Figure&#8211;and it was both their debuts!  Yay for them!  I was so thrilled for them&#8211;in their first Pro Show, too.  Wow! </p>

<p>So now even more big news&#8212;by winning the two titles, I qualified to compete at the National Shows!!!   Shannon has entered me in the upcoming NPC National Figure Championships, held in Hollywood Florida on Nov 21st.  So it&#8217;s a big &#8216;wham-bam, thank you ma&#8217;am!&#8217; and I am now in training, not for a regional show in November, but a full-on National showdown.  Whoa!  I can&#8217;t wait to see what that entails&#8211;I will probably have to work out 6 times a day!  It&#8217;s all so sudden, but I am going to give it all I have.</p>
<p>I cannot take any of the credit for my success.  Shannon and Rob tell me what to do, and I do it.  And I trust that the results will come.  I will say, however, that when I stepped on stage Saturday night, I knew deep down in my heart that I had done absolutely everything to the best of my ability.  I never slacked or skipped workouts or cheated on my meals.  I do have to substitute in some exercises for ones I can&#8217;t do due to injury, but I always make sure my substitutes are just as hard if not harder.  For example, my knees won&#8217;t tolerate hack squats, so I substitute Smith machine squats.  But I go heavier with the Smith.   And you know that I do a good bit of rearranging on my diet to keep it as raw as possible.  I am certainly not vegan anymore, but I do eat probably 40% vegan proteins and keep it as raw as possible with sushi and sashimi otherwise.</p>
<p>So I didn&#8217;t have any nagging feeling of &#8220;I wish I had tried harder&#8221; or knowing deep down that I didn&#8217;t give 110%.  I KNOW I did, and that is the one thing I can take credit for.  And it was such a good, calming feeling to know that I brought the absolute best I could be at that point in time.  The outcome is subjective and out of my control.  But being the best I can be is ultimately in my control and that&#8217;s what I did.  It is certainly not the best I WILL be, because I am getting better and better!  So my goal for Nationals is to add size on my shoulders, lats and thighs and come in even better and leaner than I did for the regional.  Will it be enough?  Who knows?  But I will know that I did all I could, and that&#8217;s all I can do!  Getting in better shape takes time and patience.  And especially persistence and consistency.  It won&#8217;t happen overnight, but it will happen.  </p>

			<content:encoded><![CDATA[<p>It&#8217;s Saturday!  That means my rear end is glued to the chaise lounge in front of our big screen TV!  Right now, the Tennessee Vols (my husband&#8217;s favorite team) is playing the Florida Gators, and so far in the first quarter holding their own against the mighty Gators.  My Georgia Bulldogs are playing the Arkansas Razorbacks at 7:45 PM tonight.  I hope we do better this week.   Don&#8217;t get me started about how much I dislike our Defensive Coordinator&#8211;pitiful coaching.</p>
<p>At the end of last week, I finished my first 4 weeks of Bombshell training.  I am thrilled at the changes in my body so far.  I can really tell a difference, and now I am getting comments from a lot of other people as well.  This is definitely the best my abs have ever looked&#8211;by far&#8211;and I am still 8 weeks out from my show.   My shoulders have really come up and are starting to actually have nice delt caps.  And I am proud to say I have built some booty!!!  The only thing I am frustrated with are my lats.  They just don&#8217;t seem to be spreading out like I want.  They are strong&#8211;I can lift crazy weight, but they aren&#8217;t giving me the V-taper I need.  I told Shannon how I felt, and she told me to be patient, but also suggested I add a certain exercise 3 times a week that is specifically designed to build lat width.  I know it works&#8211;I can really feel it!</p>

<p>Can you tell a difference?  </p>

<p>Well, I am proud of the progress, but the party is now over.  It&#8217;s time to get serious.  I received my new diet and cardio workouts from Shannon this week.  Whoa.   Good news, bad news.  The good news is I get to eat more food and the cardio is pretty much the same type of routines, just changed up a little bit.  The bad news is that the &#8216;more&#8217; food is a lot more broccoli and added mushrooms.  OK&#8211;I just hit a wall.  I think mushrooms are fungi that taste like dirt.  Yuk.  And the cardio got doubled up on me.  Now I have to do cardio TWICE per day, once in the AM and again in the PM.   Plus the weights, of course.  Wow, that is going to be hard to fit all that in, just in terms of time.  I am going to really have to work on my scheduling, especially with all the stuff I have going at night.   </p>
<p>But the worst, for me, is that the &#8216;cheat meals&#8217; now are very specific, and I can only choose from 5.  And since 3 of them are red-meat-based, that leaves me with a choice of two&#8212;2 slices of pizza or 3 pancakes with 2 eggs.  Two slices of pizza for me is a joke&#8211;a mere appetizer.  I can easily eat a whole pizza and still have plenty of room for dessert!  So that leaves the obvious choice for me&#8211;PANCAKES!!!  I have always said that if I had to choose a &#8216;last meal&#8217; it would be pancakes.  And I can make pancakes fairly healthy&#8211;not raw of course, but with some great whole grains, etc.  And I can add blueberries, peaches, apples, etc etc.  Yum!</p>
<p>In fact, I have all my stuff laid out right now to make my first batch of pancakes this evening!  I have a very healthy stone-ground 7 grain pancake mix, blueberries, and Grade B maple syrup which is much healthier and has tons of vital minerals in it.  And since it is a cheat meal, I also have real butter and molasses!   And I am going to scramble my eggs with Soy-rizo, which is a wonderful vegan version of Mexican chorizo sausage.  It&#8217;s great protein and not very high in fat.  YUM!  I can&#8217;t wait!!  I have to eat another couple meals of fish and vegetables, and then I am going in on the pancakes, right before the Bulldawgs kick off!  </p>
<p>You know, I didn&#8217;t crave sugar at ALL when I was on my high-fruit raw diet.  Even then, I knew I had to cut out fruit before my shows.  Now I am on several weeks of almost no fruit.  My 1/4 grapefruit was cut out on the new diet. <img src='http://defiant-health.com/wp-includes/images/smilies/icon_sad.gif' alt=':-(' class='wp-smiley' />   And suddenly, now all I can think about is sugar!  I crave sweets&#8211;and not the healthy kind either.  On the regular raw diet, I didn&#8217;t miss cakes, pancakes, all that stuff, at all.  Now it&#8217;s so tempting to me it&#8217;s ridiculous!  I have heard many people say they eat a raw diet with little to no fruit or sugar&#8211;no dates, honey, etc.  I don&#8217;t know HOW they do that!  I think my body runs well on good healthy fruit sugars.  It is definitely letting me know it misses the green smoothies and spirulina pies and puddings!</p>
<p>Now is when I really have to Be Defiant!  I am having to defy my own body telling me what it needs.  That&#8217;s not easy, let me tell you.  I am not craving unhealthy things.  I would kill for a banana!  But I know that the competition is not real life, so although many foods may be very healthy, they are just not conducive to achieving my goals.  And my goal is to WIN the Gold Cup on November 14th!  </p>
<p>Would you believe my breakfast consists of 12 asparagus spears &#038; 3 prunes?  I also get oatmeal and egg whites.  Here&#8217;s how I make it raw&#8211;I use the raw egg whites (totally safe&#8211;don&#8217;t even start with me on that one!), and blend them with my sprouted raw oat groats and barley, with pumpkin pie spice and stevia.  It makes a nice cake-batter-type blend.  I really enjoy it, actually!  I eat the asparagus spears first, so I save the good stuff as a reward.  That&#8217;s how I do all my meals&#8211;I eat the things I don&#8217;t like first to get them out of the way so I can eat the things I do like.  Works for me!</p>
<p>Several of the girls from Team Bombshell are in NY for the Team Universe Championships this weekend.  Shannon has been very busy helping all the girls get ready for this BIG show.  So she hasn&#8217;t gotten my new weight workouts to me yet.  So I got a little bit of leeway this week to make my own workouts up.  I went back through all I have done so far at camp and my first workouts, and picked out the exercises that I felt were the most effective and targeted the areas that I want to work on the most.  Wow&#8211;I think my versions were actually harder and more intense!  Especially Booty last night&#8211;I was sweating my booty off, and boy is it sore today!</p>
<p>Tennessee is holding its own pretty well right now.  I am eating one of my tastiest meals, with my little 1/4 apple as the high point.  I do love the sweet potatoes.  I cut them in sticks, put them in a baggie and shake with cinnamon.  Yummy.  It&#8217;s almost time to get ready to make pancakes and then settle in to watch the Dawgs kick some Razorback butt!  I am also following the results of the Team U Championships on www.Siouxcountry.com as well as Shannon&#8217;s very timely Twitters right from backstage!  Go Bombshell Sistas!!!  I hope we take down several more pro cards tonight!</p>

			<content:encoded><![CDATA[<p>Well, I am well into my second week of full-fledged official Bombshell Training and Dieting.  The reason I haven&#8217;t written much about my experiences so far is that I have been so thoroughly worked out that my fingers wouldn&#8217;t even type!</p>
<p>Nah&#8211;just kidding, but this new schedule has taken some adjustment, and is great because it is forcing me to be much more organized and efficient.  I need that.  My biggest downfall is my utter lack of organization, especially in my home office and my schedule. </p>
<p>I am now doing at least two workouts a day, sometimes three, although the third one is just a short wind sprint session that only takes me about 15 to 20 minutes to complete.  Plus I am eating literally seven times a day&#8211;small meals yes, but think how hard it is for anyone who is busy to even fit in three squares a day!</p>
<p>You know, I thought I worked out really hard and pushed myself.  Maybe compared to most I did.  I want so badly to gain some beautiful muscle and I was really lifting hard to try to achieve that.  But I have learned in the past few weeks that I was wrong.  I was nowhere near pushing myself to the extent that I need to achieve my goals.  The training that Rob and Shannon set forth for us is truly world-class.  I have seen similar workouts extolled by the elite superstars of the NFL, like Jerry Rice, who is legendary for his work ethic, and Matt Leinart, who works out so hard that he has a bucket nearby so he can throw up and keep right on training!  (And I thought he was a wussy pretty boy&#8211;guess I misjudged!)</p>
<p>So far, a bucket has been unnecessary, thank goodness.  But I do have to say that my leg workout last week was the hardest one I have ever been through in my life.  Gone are the heavy weights with nice rest between sets.  Oh no, I am no longer pushing 500-lb leg presses for 8-10 reps and then recovering before doing it again.  Now it&#8217;s supersets of at least two exercises, done with no rest at all in between, so it becomes 6 to 8 exercises back to back that pushes every muscle fiber to its limit of endurance.  The leg press has become 30 reps with about 200 pounds, which I would have scoffed at before.  Hmmm&#8230;.do 30 reps of that, jump to another leg exercise like deadlifts, and then back to the leg press for 4 rounds with no rest at all, and 200 pounds feels like a thousand! </p>
<p>The cardio is not the powder puff sessions of endless, mindless pedaling on an elliptical machine.  No, it is intense intervals that are really high-rep leg workouts in disguise, building extreme muscular endurance while sending the heart rate through the roof and sweat dripping all over the place.  I said I wanted a bigger butt and legs.  Well, be careful what you wish for!  I am definitely heading in that direction and it hurts!</p>
<p>To ahcieve a goal you have never attained, you must do things you have never done.   I am definitely pushing my boundaries way out beyond my comfort zone.  It&#8217;s hard.  I am hurting.  I am sore.  I also have aggravated all those lovely old horseback riding injuries that had been lying dormant and not giving me much trouble.  My right lower back, hip, and especially knee have been screaming at me for a week.  Walking on my right leg has been literally difficult for nearly a week, but I gutted out every single rep of my workout schedule.  We get two days off on the weekends, and I have never been so glad to have a chance to heal! </p>
<p>I finally was able to see my A.R.T. practitioner extraordinaire Dr. Renick, my massage therapist Shelly Daugherty and my naturopath Richard Weiler today.  Today was all about getting Christy fixed!  These people are all incredible professionals who truly support me and care deeply about my well-being, and also my success in attaining my goal.  No goal is ever achieved in a vacuum and I couldn&#8217;t make it right now without these fabulous people.  I love you all!!!</p>
<p>My diet&#8211;wow that&#8217;s a crazy subject.   I have been forced to make a decision to depart from some of the principles that have guided my nutrition for the past two years.  Anyone else would look at the diet they have me on, and think it was the healthiest diet they have ever seen.  But my perspective is different.  I am only eating fish, but I don&#8217;t even like doing that.  But so far, I have not found any raw vegan protein sources that truly mimic the effects of the fish, except for the Sun Warrior.  I am substituting seitan and tempeh for some of my meals, and they are great (although not raw), but they are higher in sodium and carbs, so I don&#8217;t think I will be able to eat them closer to a show. </p>
<p>There are many fabulous protein sources in the raw food world, but most have a very high fat content.  For every day, that is just fine&#8211;the fats are necessary and healthy.   But doing what I am doing is not the real world.  For example, you all know I am very lean, usually hovering around 8 to 10 percent body fat on my every day diet, eating as much and whatever I want.  But for stage, Rob wants me to shed 10 pounds of bodyfat and gain a significant amount of muscle.  Stage is NOT real life!  So temporarily, I am going to trust their expertise and do what it takes to achieve my goal.  All my other foods I am eating raw.  For example, where they say oatmeal, I am eating sprouted raw oat groats.  All my sweet potatoes, veggies, etc are raw.   So as a percentage, I am still very high raw in my diet, and so far it is working pretty well.</p>
<p>I took measurements last week, and my waist has already come down over an inch!  Wow!  all others were about the same, so that means no muscle is being lost.  I am going to try to measure every week to see how things change.  Also, I will be taking progress pics.  I will share some of those, also.</p>
<p>It&#8217;s funny.  We get one &#8216;cheat meal&#8217; every week, where for one meal we can have whatever we want&#8211;within reason.  This really helps jump start the metabolism and replenishes a lot of the lost glycogen depleted during the week&#8217;s workouts.   But I wasn&#8217;t craving pizza or cake like I used to.  No, I wanted more than anything&#8212;&#8211;a green smoothie!  Some fruit!  And Spirulina pie!  I ended up eating Amy&#8217;s burgers on awesome Ezekiel buns (those are fabulous&#8211;give them a try!), slathered in organic BBQ sauce, grapeseed Vegenaise and my homemade guacamole.  And I made a delectable white chocolate macadamia cheezecake for dessert, from my birthday cake recipe.  I thought I would literally eat at least half the cheezecake, but I was only able to eat about 1/4 of it.  I savored every bite, though!</p>
<p>Another cool thing I did this week was straighten my hair!  Shannon wants me to straighten it for stage, and I have never been able to do it and get it to look half decent before.  With some advice from some friends, I tried it last week for a costume party Michael and I were attending, where we were pirates and I wanted to wear a skull rag and that wouldn&#8217;t work with my big hair.  I loved it!  It turned out beautiful and was so easy to maintain, once the initial time-consuming work was done.  It takes me a good two hours to get it straight.  Hopefully, that will lessen with experience.  I also discovered I can just put a nice curl on the ends and end up with a great style.  The front isn&#8217;t cut right, though.  It&#8217;s probably just too short.  I am going to see my stylist Sept 8th, and we are going to work on it.</p>

			<content:encoded><![CDATA[<p>Hi Everybody!</p>
<p>I can&#8217;t believe how great I feel, and how much energy I have!  I noticed the phenomenon last night when I had a big salad for my post workout meal along with a simple shake of water, Sun Warrior vanilla protein, cinnamon and L-glutamine.  No sugars at all, and very little fat, just what was in the tiny bit of salad dressing.  And I had energy to burn last night!</p>
<p>Today, I feel almost elated.  I am in a great mood, and feeling very positive.  I think this high-protein and high-fat diet is agreeing with me.  I don&#8217;t think I could continue long term, especially with the percentage of fat being that high.  But so far, it is working well for me for the goal of depleting carbohydrates and muscle glycogen.  </p>
<p>Today I have had a spirulina smoothie, two &#8216;Muscle Mousses&#8217; of avocado, chocolate SW protein, greens, and stevia, a big salad with a handful of almonds, some creamed jicama, Thai cucumber noodles, and some Spicy Cilantro Soup.   Pretty darn tasty if you ask me!   <img src='http://defiant-health.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>
<p>When I competed before, I was of course on the SAD conventional bodybuilding pre-contest diet.  It worked, no doubt.  But I felt awful.  I was irritable, exhausted, nervous, enduring maddening cravings, had a constant headache, and just generally felt really bad.  I couldn&#8217;t WAIT to get off of it and gobble up a cheat meal.  Can you believe that my cheat meal used to be a whole pizza and a whole &#8216;grocery store birthday cake&#8217;&#8211;you know, the kind in the bakery with all the buttercream icing?  I could eat both at one sitting.  That used to freak my husband out.  He thought it was so gross.  And it was!  (Looking back anyway.  At the time, it was wonderful.)  No wonder I ended up in surgery having tumors removed, and was fighting diabetes every day.   But I thought I was doing the right thing, especially because my body always responded well to the cheat meal tactic.</p>
<p>Funny, but I am not dying for some kind of cheat meal right now.  In all my previous contests, I had a cake waiting for me immediately afterward, and then it would be pecan pancakes at Cracker Barrell the next morning.  I just don&#8217;t have that desperate craving for sugar now.  I will definitely have a good time on Easter Sunday, and will probably eat some of my Mama&#8217;s good cooking.   But I don&#8217;t think I will blow it out.  I just don&#8217;t want to go back to that old way of eating, where I felt and looked so bad.  My face and skin used to look awful too.  But now my skin actually looks better than it has, and several people even commented on that tonight.  Since I have been tanning, it improves my skin alot.  I do struggle with acne, but it goes away when I get good sun exposure. </p>
<p>Today I had a posing session with Harrison Greenlaw, who coaches the USC bodybuilding club.  He was very helpful, and surprisingly, very complimentary.  My friend who hooked me up said he was very critical and would tell me what my weak points are.  Which is fine, and I was actually looking forward to it, because you can&#8217;t grow unless you know what to work on.  I figured he would really nail me on my legs and shoulders, but he said instead that he thought I was pretty symmetrical and had good leg muscle.  (I did measure yesterday and I had gained an inch on my quads over the last couple of months.)  So I walked out of there feeling awesome!</p>
<p>I then picked up some supplies, got my nails and pedicure done, and then had a spray tanning session called Mystic Tan.  I had never done that, and it was weird.  I felt like I was going through a car wash, and I smell funny.  But it worked!  I definitely have a good base to start the ProTan application tomorrow evening.</p>
<p>I worked chest and triceps tonight, in the high rep low weight style.  This is to deplete my muscles of glycogen as much as possible, so hopefully they will be very hungry and ready to soak up some carbs come Thursday and Friday.</p>
<p>Someone very near and dear to me said something very interesting to Michael this weekend.  This person, and their spouse, are wonderful friends who I love dearly.  And I worry about their health so much.   They look like ticking time bombs to me&#8211;very overweight, lots of health issues, eat terribly, and drink a lot.  It hurts to see people you love damage themselves like that, knowing what lies down the road.  Anyway, they pulled Michael aside and asked him if I was <em><strong>sick</strong></em>.  They said I was &#8216;too skinny&#8217;, had lost &#8217;so much weight&#8217; and had &#8216;all these veins showing&#8217;.  I had to laugh out loud.  It is amazing that the average person wouldn&#8217;t recognize health if it bit them on the butt!   Granted, I am thinner than I would normally be, and when someone is in contest shape they may not look so great in street clothes.  But still, how can someone who is so unhealthy think that I am the one who is sick?  This blew my mind.  For the record, I am so happy &#8216;all these veins&#8217; are showing!  I love my veins, especially the one on my biceps. </p>
<p>It is dangerous that our society views someone who is lean and muscular as being &#8217;sick&#8217;, but think someone who is overweight is healthy.  The average person is very overweight now, even obese, and yet they are &#8216;average&#8217;.  How scary is that?  Remember when there was a &#8216;fat kid&#8217; in your class growing up, and everyone else was thin?  Now, it&#8217;s probably at least 60% of the kids in any class are obese.  I was one of the bigger, heavier ones in my class.  I was muscular in high school from all the sports, but also a bit overweight due to my country-fried diet.  I weigh about 20 pounds less now than I did in high school.  And all the other girls seemed so thin and pretty to me.  And by today&#8217;s standards, they were certainly tiny!</p>
<p>It&#8217;s time to take my sick, skinny, veiny self to bed!  HaHa!  I need to keep good sleep up.  Which is hard since I am drinking a lot of water.  I can&#8217;t stay out of the bathroom!  I am actually looking forward to water restriction on Friday.  I don&#8217;t like drinking water, and prefer to get my hydration from fruit and food. </p>

			<content:encoded><![CDATA[<p>I was blessed to be invited to an incredible meeting tonight.  Simran Singh, of 11:11 Magazine, is creating an alliance for Holistic Practitioners of all kinds, called <strong>C.H.O.I.C.E.</strong>   That stands for <strong>Collaborating Holistic Organizations Inspiring Conscious Empowerment</strong>.   What an amazing group of people gathered there tonight, exuding positive energy so that the room was nearly vibrating.   As a Living Foods teacher, I hope to be able to work within this group to help others and expand my own business at the same time.</p>
<p>I met massage therapists, reconnective practitioners, reiki masters, yoga instructors, web/computer gurus, herbal experts, and many more.  There is truly a groundswell of wellness that is erupting and pushing its way into the consciousness of the mainstream.  Paul Zane Pilzer, the economic guru who has predicted the past few big industry trends, says that the Wellness Industry is becoming the largest movement in history, creating the biggest industry wave ever known.  Much bigger than the real estate boom and the dot-com boom put together.</p>
<p>Let&#8217;s face it.  The Baby Boomers are the most powerful market force ever.  And they are turning 60, getting older, facing health challenges, and aging physically.   And they don&#8217;t like it.  So they are willing to spend money to change it.  Add to this that people are getting much wiser to the shortcomings of allopathic medicine in terms of disease prevention.  Certainly allopathic medicine has its place.  If you just had a heart attack or a car accident, the incredible surgeons are your best friends.   However, preventing that heart attack is where allopathic medicine is gravely lacking.  </p>
<p>Prevention is only possible through excellent health.  Not just &#8216;looking good&#8217;.  I mean being vibrantly alive and energetic inside and out, with all bodily organs and systems functioning at a high level.  Even the most fit person may not be healthy if their inner organs are damaged and suffering.  Some of the best looking people on earth are the most unhealthy you will find.  Case in point:  athletes and bodybuilders eating poor diets and ingesting dangerous supplements and drugs.  Or a model who is anorexic.  They may look good now, but inside are a ticking time bomb.  Let&#8217;s look again in twenty years, if they make it that long.  If the internal organs are beautiful, then the body will follow suit and be beautiful as well.  True health comes from the inside out, and will stand the test of time.</p>
<p>It is very important to me to help educate as many people as I can on how to be healthy through eating delicious natural foods, exercising appropriately, and managing stress.  I teach people how to release bodyfat, defy aging, and allow their infinitely intelligent body to heal itself by fueling it with delicious living foods.  One cannot eat dead foods and expect to feel energetic and alive. </p>
<p>I have a Living Foods class this Thursday, Feb 12th.   This one is a fun class of Valentine&#8217;s Decadent Desserts.  Details are on my Defiant Events page.   Imagine eating dessert and being healthier <span style="text-decoration:underline;">after</span> you have eaten it, with no guilt or heavy yucky feeling, like you get when you overindulge on sugar-&amp;-fat-laden sweets.  And I am developing a series of classes, one that will start with &#8220;Living Foods 101&#8243; and build upon very basic concepts.  The other I am really interested in is a &#8220;12 Steps to Optimal Nutrition&#8221;, designed to help release the shackles of food addictions and break free for good.   More on this very soon.  </p>
<p>I invite each of you to join me this Thursday.   This class is going to be a blast!</p>
